And this is how the cookie crumbles.

I feel like I’ve been in a funk lately. People say that you find yourself in college. Well, it doesn’t stop right after graduation, the “finding” yourself. No, this isn’t pity party for myself. However, you know that feeling when you put so much into something and don’t get anything in return, or when you get a piece of good news but it goes sour just as soon as you received the good news? Post-grad life is strange and uncomfortable. That high that you get soon after walking across the stage to receive your diploma and lift the tassel to the other side disappears quickly. This is the weirdest transition in my life yet; I am a REAL adult without that adult thing called a job. Sometimes I have to step back and remind myself, “Hey, you know you graduated in May and had a summer job, right?” It’s only been four-ish months and one month of unemployment. But the expectations I have for myself are high, and I want to be movin’ and a’shakin’ this world. All of this worrying and anxiousness hasn’t gotten me nowhere though. I feel like a stronger and more confident person. Yes, I still cry sometimes out of the frustration but with bared teeth. After today’s phone interview, I felt frazzled but didn’t feel like being unproductive. So what do I do? Bake of course. I needed to work on a care package anyways. So here are the results– White Chocolate Chip Oatmeal Cookies. Keep reading past that delicious picture for the recipe.

White Chocolate Chip Oatmeal Cookies … makes approx. 36 pretty large cookies
INGREDIENTS:
1 3/4 cup AP flour
1/2 tsp salt
1 tsp baking soda
1/2 tsp cinnamon
1 cup (2 sticks) unsalted butter, room temp.
1 cup white granulated sugar
1 cup brown sugar
2 eggs, room temp.
1 tsp vanilla extract
2 1/2 cups rolled oats
1 1/2 white chocolate chips
PROCEDURE:
1. Combine flour, salt, b.s., and cinnamon together in a bowl and whisk to combine. These are your DRY ingredients.
2. Onto the WET. Beat your two sugars, butter, and vanilla until combined and fluffy in a mixer or separate bowl from the dry ingredients.
3. Add eggs to sugar and butter mixture.
4. Slowly spoon in the dry ingredients and mix to combine.
5. Fold in oats and white chocolate chips by hand.
6. Preheat oven to 350 degrees Fahrenheit.
7. Shape dough into about 2 inch thick balls and place on a parchment lined baking sheet, flattening slightly.
8. Bake for 11-12 minutes, until golden brown on the edges, and cool on sheet for 10-12 minutes before transferring to a cooling rack.

These are the thin, crispy-on-the-edges, chewy-in-the-center type of cookies. The brown sugar lends a very caramel-y, buttery taste to the edges of the cookies, which is spectacular! Enjoy!
