[Hot] Spinach Artichoke Dip

I made this hot spinach artichoke dip for Christmas Day dinner, because I had been craving it and  have never made it before. IT’S ABSOLUTELY AMAZING. I looked to Chef John from Food Wishes for this recipe, since it is something that I felt that he would have a really easy and great recipe for without all the fuss and muss. He mentions that most recipes call for mayo, which I didn’t know, so I was super stoked that this version had no mayo! Mayo = gross. Here’s the recipe:

Ingredients

– 2 tablespoons butter
– 1/2 cup chopped green onion, white and light green parts only
– 2 cloves garlic, very finely minced
– 1 package (10 ounce) frozen chopped spinach, thawed, drained, squeezed dry
– 1 can (14 ounce) artichoke hearts, drained, roughly chopped
– 8 ounces cream cheese at room temperature
– 1/4 teaspoon hot sauce (I used a couple dashes of siracha)
– very small pinch of nutmeg ( I didn’t have any, so I omitted this)
– salt and fresh ground black pepper to taste
– 1/2 cup grated gruyere cheese (I also didn’t have this on hand, so I just did equal parts parm and mozz)
– 1/2 cup grated Parmesan cheese
– 1/4 cup mozzarella, shredded

Procedure

At medium-low heat, melt butter in a saucepan and add the green onion with some salt, cook for 5 minutes. Turn off stove and put garlic in the butter/onion mixture to seep a little.

In a mixing bowl, mix together the artichoke, spinach, cream cheese, hot sauce, onion/garlic butter, nutmeg, and cheeses. Then place the completed mixture into ramekins as Chef John did or like I did in a Pyrex bowl. Top with some cheese and bake at 400º F for 25-ish minutes. Mine took longer since I placed it in one bowl, so use the golden brown look of the top of the dip to gauge its readiness.

This dip is really foolproof, I promise! So delicious! Use bread, use crackers, use chips! Just scoop it all up! Here’s visual proof that it was good, courtesy of my brother haha!
